Summer Fun with BBQ Southwest Egg Rolls

Brace yourself.  There’s another heatwave coming. We had a brief break from the 40C heat here in Toronto, but it’s coming back. It’s not that I am bored of BBQing … but I am definitely searching for options – I want to try something different – to extend beyond the simple chicken, corn on the cob and salad option.

I found it.  And it looks delicious. And I am making it tonight.

Southwest Egg Rolls

Shall we say ‘yum’ all together?

Black beans, ground beef, taco seasoning, chilies, corn, egg roll wrappers, cilantro… anything with cilantro and I am all yours.  How divine.

I am not sure I will get the black beans or the chilies by the kids. For their egg rolls I will bypass the chilies, and quietly puree the black beans then mix them in with the ground beef (shhhhhh. don’t tell).

For the grown up egg rolls, I will leave them as is – and add extra guacomole and salsa and… cilantro. My mouth is watering already.

What a great alternative to traditional BBQ night!  And I love that the cooking will be outside – not heating up my already too hot kitchen.
