Jerk Pork Chops with Tropical Salsa
It’s good to be forced to use marinades and spices.
It makes a huge difference.
Who knew?
My cooking is Bland. And that’s capital ‘B’ Bland.
But I tried this recipe out and am in LOVE with the Compliments Caribbean Jerk Marinade. We just had our chicken tonight marinated in it, and my husband almost fell off his chair. He didn’t need a litre of water to wash down his meal. Amazing.
The tropical salsa is to die for. Seriously high on the delicious factor. And if you need it spelled out… that’s rare in my kitchen. The cilantro makes it. Go heavy on the cilantro.
I tested this recipe at a friend’s cottage last week (they were game to have me make dinner!) and it was a hit. Every leftover and morsel was eaten. And it got two thumbs up all around the table.
Look at what little old me made! It’s quick. affordable and delicious.
One hint: Leave some of the marinade to brush on the chops once you’ve BBQd it.

This is a terrific sounding recipe. My mouth is watering already! For an added zing (and for more digestive enzymes in the meal), I would also include 1/2 finely diced mango in the Tropical Salsa.
Of course, that is partly because I love mango so much, but also it helps with digestion and cuts ‘spicy’ foods.
