Recipe of the Week: Meal Planning Mama’s Buttermilk Chicken



A huge welcome to our latest cook extraordinaire, Amber.  This gal is so good, she has her own blog called mealplanningmama-weeklymealplans.blogspot.com. That’s a big name for a big site- one that is full of great recipes and help planning your meals.  Tell me that is not a gift from above.

Buttermilk Chicken

Chicken Drumstick, or Thighs, (kids love the drumstick!)
Buttermilk, about 1/2 a carton, enough to  have chicken swimming
5 whole garlic cloves ..squashed
1 tablespoon Cumin
1/4 cup maple syrup
salt
pepper
1 large zip lock bag

Put chicken in the zip lock bag.
In a separate bowl, combine garlic, cumin, maple syrup, salt and pepper.
Pour mixture into bag, massage mixture into chicken until it is completely covered.
Place chicken in fridge to marinate, or an even more tender chicken leave overnight.
When you are ready to cook:
Preheat oven to 350F
Pan fry chicken, until lightly cooked, then put into a hot oven for 25 minutes, or until juices run clear.
Serve hot from the oven with a salad and some multigrain dinner rolls for a delicious dinner, or pack them up and have a picnic, this chicken is great cold as well!
