In honor of Father’s Day on Sunday, I thought I would share my husbands favorite recipe.  If you are looking for the ultra healthy, fibrous, gluten and sugar free, taste like cardboard type cookies… These are not them.  These are the good, old-fashioned, like your mum used to make cookies.  I hope you enjoy!

This is my alltime favourite recipe. (Well, actually it’s a tie for the alltime favourite… Which I’ll tell you about another time.  My
mum used to make these Oatmeal Chocolate Chip Cookies for my brother and me. We would wait eagerly for them to cool, tall glass of cold
cold 2% milk in a plastic cup and devoured a plate of mum’s cookies in no time.  I intend to make some with our kids on Father’s day.

Chocolate Chip Oatmeal Cookies

Preheat oven to 350 degrees F.

Ingredients

3/4 cup butter or margarine, at room temperature

1 1/2 cups packed brown sugar

2 large eggs

1 tsp vanilla

1 cup all purpose flour

1 tsp baking soda

½ tsp salt

2 1/2 cups oatmeal

chocolate chips, about 1/2 cup (or more, as desired!)

    In a large bowl,beat together butter and sugar until light and fluffy.  Blend in eggs and vanilla.

    In a separate bowl, combine flour, soda and salt.  Add to butter/sugar mixture, and mix well.

    Stir in oats and chocolate chips.

Drop by spoonfuls onto greased cookie sheet, leaving space for expansion as they flatten out and bake.

Bake in batches at 350 degrees F in centre of oven until golden, about 12 minutes.

Transfer cookies to rack to cool completely
