Recipe of the Week: Squash Soup

This recipe is from my Mother in Law, not sure where she got it but I’ve seen many variations. My daughter really likes it and even her little friends will eat it. It freezes well so is good for lunches!
I make up some cornmeal muffins to go with it, and for dinner, some fish or chicken fingers , and salad.
Squash Soup
Bake a large Butternut squash in oven, cut in half with a little bit of water at 350C for 45 min or until done/soft. I do this even 1 or 2 days before when I’m in the kitchen anyway.
I also add an acorn squash. Clean cooked flesh off skin.
Saute 1 carrot, 1 med. onion and 1 leek in 2 Tbsp. butter.
Add 8 c. chicken or vegetable broth, the cooked squash and bring to low boil.
Add 1 apple, peeled and chopped, a Bay leaf, 1 tsp. sugar, salt and pepper to taste.
Simmer about 40 min.
Remove Bay leaf and puree.
Delicious served over some brie cheese in the bottom of the bowl.

For an even easier version, simply roast a spanish onion, squash and garlics (2-3) stuck into the squash at 375 for about an hour. Then put in a pot, add 4 c. apple juice or low sodium broth or a combo depending on sweetnees desired.
Blend with a handheld blender. Voila!
Even my 7 month old eats it up.
