Tuna Cakes
Published 5th January, 2010 No commentsTuna cakes have been a new hit around our place- great for a chilly winter meal.
I add in broccoli that has been steamed and pureed, or kale that has been steamed and pureed. I also add in some Flax seed meal for a little extra oompf.

Tuna Cakes
1 can (7 1/2 oz.) tuna
1 tbsp. finely minced onion
1/4 c. mayonnaise
1 egg, slightly beaten
2 tbsp. lemon juice
1/4 tsp. salt & a little pepper
1 1/2 c. soft bread crumbs
1 tbsp. butter
1 tbsp. oil
Drain tuna and chop coarsely. Combine tuna, onion, mayonnaise, egg, lemon juice, salt, pepper and 3/4 cup bread crumbs in bowl. Mix well. Divide into 3 portions. Roll each portion in remaining bread crumbs and form into 3 patties. Refrigerate 1 hour.
Heat butter and oil in skillet over medium heat, cook cakes 3 to 4 minutes on each side until golden brown. Serve with tartar sauce.
