Recipe of the Week: Saucy Mexican Chicken

Saucy Mexican Chicken
Prep Time: 5 min Total Time: 30 min Makes: 4 servings, 1/4 recipe (275 g) each
Ingredients
1 lb. (450 g) boneless skinless chicken breasts
1 jar (454 mL) salsa
1 can (540 mL) black beans, rinsed
1 cup KRAFT Tex Mex Light Shredded Cheese
Directions:
COOK chicken in nonstick skillet on medium-high heat 4 min. on each side or until browned on both sides.
ADD salsa and beans. Bring to boil; cover. Simmer on medium-low heat 5 min. or until chicken is done (170ºF).
TOP with cheese. Remove from heat. Let stand, covered, 5 min. or until cheese is melted.
A Few Suggestions
Prepare using 8 boneless skinless chicken thighs.
Save 750 mg sodium per serving by substituting 1 can (398 mL) no-salt-added diced tomatoes and 1 tsp. each dried oregano and basil for the salsa.
