Recipe of the Week: Nat’s Chocolate Chip Oatmeal Cookies

Can you really only eat one?
Another wonderful girlfriend, another great recipe. I had never heard of spelt flour, until I met Nat. What a gal. She has introduced me to cooking without white flour and sugar and butter – I never knew it could be done. It’s been said before, and I will say it again…I am not a baker. I make cookies that rival the hockey pucks in the NHL.
This recipe was revolutionary to me… no butter, no sugar no white flour… but still really yummy. I’d love to hear your feedback if you make them… or perhaps you have some yummy and healthy recipes to share? Just click on the comment button – I’d love to hear from you!
Nat’s Chocolate Chip Oatmeal Cookies
3/4 cup grapeseed oil (recipe calls for butter but I use grapeseed oil)
1/2 cup maple syrup (recipe calls for 3/4 cup brown sugar and 1/2 cup white sugar)
1 egg
2 tbsp water
2 tsp vanilla
3/4 cup spelt flour (or any type of flour-i just use spelt in everything)
3/4 tsp baking soda
1 tsp cinnamon (i always use more b/c i love it)
3 cups rolled oats (NOT quick cooking)
1 cup choc chips or raisins-i have used raisins before and they never turn out as good as with the choc. chips
- cream oil, syrup, egg, water and vanilla together on med. speed until light and fluffy
- Combine flour, soda and cinnamon- Add to creamed mixture
- Stir in oats and choc chips or raisins
- Drop dough by heaping tablespoon onto greased cookie sheet (i use parchment paper so it doesn’t need any grease)
- Press flat for crisp cookies or leave mounded for chewy cookies
Bake at 350 for 12-15 min (i find that it takes close to 18 min but every oven is different)
