Recipe of the Week : Mac and Cheese With A Twist!
Published 24th September, 2009 5 commentsMmmmmmm. Mac and Cheese. Can’t go wrong and it’s a no fight meal around our house for sure. There are a zillion twists you could add to this recipe- I’d love to hear about them! Please click on the ‘Leave a Comment’ link and share your delicious ideas!
Mac and Cheese with a Twist
1 1/2 c. whole wheat elbow macaroni (I use rice pasta)

Who can resist mac and cheese?
1 cup milk
1/2 cup navy beans or chickpeas or white beans, drained, and pureed
nonstick cooking spray
1 1/2 cup shredded reduced fat Cheddar Cheese
1/2 tsp salt
1/8 tsp garlic powder
1/8 tsp paprika
1/8 tsp pepper
1. Bring large pot of salted water to a boil, add macaroni, and cook until al dente. Drain.
2. While macaroni is cooking, combine the milk and the beans in a food processor and process until pureed.
3. Coat a large saucepan with cooking spray and set it over medium heat. Add the bean mixture to the pan and cook, stirring until smooth, 1 to 2 minutes. Add the cheese and cook until melted and creamy, 1 to 2 minutes longer. Stir in the salt, garlic powder, paprika, and pepper. Stir in the macaroni and serve warm.
My alterations:
- I put it in a casserole dish and cook it for a while to heat it up. (about 400F for 20 -30 minutes)
- I steam broccoli, Kale or spinach then puree in the food processor and add that in too.
- I add some cheese, bread crumbs and flaxseed meal to the top.
- I eat with hot sauce to add a little “oompf!”

Looks great! But how could it possbily be bad when it’s written by a Seinfeld?
I grew up in a household where my dad’s idea of a square meal was hot dogs and peas in my Kraft Dinner. On a “good day” the hot dog would be substituted with bacon. Still to this day I add peas to my mac and cheese (and the occasional hot dog)
