Recipe of the Week : Introduction to Lentils
Published 17th September, 2009 1 commentLentils. They have never been my choice of food- until I made this puree (or add extra stock to make a thick soup). It is absolutely delicious and the entire family loves it. I love that the lentils are a good cheap source of protein and that they also provide iron (critical for brain development).
Introduction to Lentils
1/2 small onion, finely chopped
100g or 4 oz carrots, chopped (I think i used around 4)
15g or 1/2 oz celery, chopped
dash of olive oil
50g or 2 oz split red lentils
200g or 7 oz sweet potato, peeled and chopped
400 ml or 14 fl oz vegetable stock or broth or water
Slowly and gently cook onion and celery with dash of oil until softened. Add rest of ingredients and stock or water. Bring to a boil, then turn town heat and simmer covered for 20 minutes. Mash or puree in a blender.
